Rice Paper Tteokbokki is a quick and easy alternative that still delivers all the flavor you love. This ingenious hack uses rice paper as an alternative to rice cakes, by dipping them in water and rolling them into small logs before cutting into sections. So easy and delicious, you’ll wonder why you didn’t think of it sooner!
Ingredients

48 piece Rice paper sheets

4 tbsp Gochujang (Korean pepper paste)

2 tsp Hot pepper paste (optional)

2 cup Chicken broth or vegetable broth

4 tbsp Soy sauce

4 tsp Organic sesame seeds

4 tsp Sesame oil

8 stick Scallions, chopped
Directions
Soak the rice papers in water for about 5-10 minutes, and then roll each paper to stick format and cut into half.
Use a non-stick pan with medium-high heat, add chicken broth along with gochujang, hot pepper paste and soy sauce.
Add the rice paper sticks into the pan, cook about 3-4 minutes till the rice sticks become soft. Drizzle a few drops of sesame oil while turning off the heat, blend well.
Sprinkle with sesame seeds and chopped scallions in the end, stir well and enjoy.
