Ingredients

1 cup Organic adzuki beans

3 cup Water

2 tbsp Raw sugar

2 tbsp Organic coconut blossom sugar

10 piece Ice cubes

0.5 cup evaporated milk

1 big scoop vanilla ice cream
Directions
Soak adzuki beans overnight for at least 8 hours. Rinse next day and drain.
Add soaked adzuki beans and water into a pot, bring to a boil.
Switch to low heat and simmer for 60-90 minutes until beans are extremely soft.
Drain the remaining water and then add sugar. Stir and mash the beans with medium heat for about 10 minutes until the mixture turns into a paste.
Transfer the paste to a bowl or container, and refrigerate for at least 2 hours.
Use a tall glass, fill 1/3 of the glass with red bean paste. Pour evaporated milk to cover the red beans.
Add crushed ice to the drink, and top it off with a scoop of ice cream with extra red beans on top. Serve immediately.
