Ingredients
-
2 ripe bananas
-
1 cup rolled oats
-
1 cup whole wheat flour
-
1/2 cup walnuts, chopped
-
1/2 cup unsweetened almond milk (or your choice of milk)
-
1/2 cup brown sugar
-
1/4 cup olive oil
-
2 eggs
-
1 tsp vanilla extract
-
1 tsp baking powder
-
1/2 tsp baking soda
-
1/2 tsp cinnamon
-
1/4 tsp salt
Directions
Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius). While the oven is preheating, line your muffin tin with muffin cups or lightly grease them.
In a large bowl, mash the ripe bananas with a fork until they are smooth.
Add in the eggs, olive oil, brown sugar, vanilla extract, and almond milk. Stir well to combine these wet ingredients.
In another bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt. Mix these dry ingredients thoroughly.
Gradually add the dry ingredients to the banana mixture, stirring just until incorporated. It's important not to overmix here as it can result in tough muffins.
Fold in the chopped walnuts, reserving a few for topping the muffins.
Divide the batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle the reserved walnuts on top.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
