Baked Oatmeal with Berries

It’s healthy, hearty, filling and full of flavor. It’s packed with wholesome ingredients – oats, nuts, almond milk, and maple syrup! This dish also includes fresh fruits like strawberries and blueberries which add yet another layer of mouth-watering texture. I love eating this warm during cold winter months or serving on top my Greek yogurt for lunch– Either way I know will be happy 🙂
Ingredients

8 cup Organic rolled oats

8 tbsp Organic brown flax seeds, ground

2 cup Organic California raw walnuts

2 cup Organic peeled hemp seeds

1 cup Organic coconut blossom sugar

2 ⅓ cup Organic shredded coconut

4 tsp Baking powder

4 tsp Cinnamon powder

3 tsp Sea salt

3 cup Milk or any nut milk of your choice

1 cup Maple syrup

12 tbsp Organic virgin coconut oil

4 cup Banana, sliced

4 cup Strawberries, sliced

2 cup Blueberries

24 tbsp Water
Directions
Preheat the oven to 350 °F (180 °C). Spray a 20-cm (8-inch) square baking dish with cooking spray.
Mix the flaxseed and warm water in a small bowl. Set aside to thicken for about 5 minutes.
Scoop 2 tablespoon each of the walnut pieces, hemp seeds and shredded coconut and set aside.
Mix the rolled oats with the remaining almonds, hemp seeds and coconut flakes in a large bowl. Add the baking powder, cinnamon powder, coconut sugar and salt, mix well.
Use a separate bowl, whisk to combine the milk, maple syrup and coconut oil. Add in the thickened flaxseed mixture and blend until smooth.
Pour the wet ingredients into the oats mixture bowl, stir and blend well.
Layer the sliced banana and strawberries in the baking dish, and spread the oat mixture on top. Sprinkle with the blueberries and the reserved 2 tablespoon each of walnut pieces, hemp seeds and shredded coconut.
Bake for about 50 minutes. Let cool for 30 minutes before serving.
