Coconut Date Balls

These coconut date balls are one of the best simple pantry recipes I’ve found for healthy snacking. If spending money on snacks isn’t your idea of fun (or maybe it’s just too expensive), make these at home with ease – they’ll be cheaper than store bought AND healthier too!

INGREDIENTS
(For 4 Servings)

  • 24 piece Organic jumbo medjool dates
  • 4 cup Organic pecan nuts
  • 2 cup Organic quick rolled oats
  • 0.5 cup Almond butter
  • 0.5 cup Organic shredded coconut
  • 4 pinch Salt


PREPARATION

STEP 1: Pit the dates and soak them in warm water for 10 minutes to soften the outer skin.
STEP 2: Put the softened dates, pecans, quick oats into a food processor. Add almond butter, a pinch of salt and start blending till the mixture becomes a sticky dough.
STEP 3: Scoop about 2 tablespoons of the mixture into your hand and roll them into balls.
STEP 4: Final step is to roll the balls in the shredded coconut and you are ready to enjoy the delicious date balls.
