Enjoy this classic, creamy stovetop rice pudding recipe. Simply simmer the rice with milk and coconut sugar. Then finish with raisins, vanilla extract, toasted coconut chips and cinnamon sugar. One of the best comfort foods in winter!
Ingredients

3 cups milk

½ cup short-grain rice (preferably Arborio rice or Sushi rice)

¼ cup organic coconut sugar

¼ cup organic raisins

1 tbsp vanilla extract

Sprinkle of salt

Optional: sprinkle of cinnamon sugar

Optional: some toasted coconut chips
Directions
Use a large pot, add milk and coconut sugar and bring to a boil. Watch carefully it doesn’t boil over.
Add rice, slowly stir and bring to a boil. Then simmer for 1 ½ hours. (Stir the rice occasionally to make sure it doesn’t stick to the bottom.)
Once the rice reaches creamy texture, remove from heat.
Add raisins, vanilla extra, and sprinkle of salt, stir well.
Optional: sprinkle some toasted coconut chips and cinnamon sugar on top of the pudding for extra flavor.
Serve immediately, or chill in the fridge for about 2 hours before serving.
