Pecan Pie Bars are a delicious, easy dessert that everyone will love. They are loaded with pecans in a homemade caramel sauce filling, baked over a shortbread crust and have a delicious topping that makes them taste even better!
Ingredients

1 cup all-purpose flour

1/4 tsp fine sea salt

12 tbsp unsalted butter, diced

¾ cup organic coconut blossom sugar

¼ cup honey
-
1/8 whipped cream

½ tsp vanilla extract

1 ½ cups organic pecans, chopped
Directions
Preheat the oven to 350˚F. Line a 13×9 baking pan with foil or parchment paper. Spray with non-stick cooking spray and set aside.
Prepare the crust: Add all-purpose flour, ¼ coconut sugar, salt and 6 tbsp diced unsalted butter in a large bowl. Beat at medium speed till mixture resembles coarse crumbs. Transfer the mixture to your prepared pan. Press crust mixture evenly onto bottom of the baking pan. Bake 18-22 minutes or until the edges are light golden brown. Remove from the oven and set aside while you finish the filling.
Prepare the filling: Combine ½ coconut sugar, honey, 6 tbsp diced butter, whipping cream and pinch of salt in a saucepan. Bring to a boil then reduce heat and simmer for 2 minutes. Remove from heat and stir in vanilla extract and chopped pecans, mix well.
Spread the filling evenly over hot, partially baked crust. Bake another 25 – 30 minutes or until top turns caramel color.
Cool completely, cut into bars or squares, and serve at room temperature.
